I enjoy cooking, but sometimes I need a break from standing by the oven or over the stove, which is why I’m always on the look out for great salad recipes.
A couple years ago, my husband and I decided that our diet needed a serious overhaul. Pizza nights and fast food were all too common, and we were starting to not feel very good. We decided to try to follow the paleo guidelines, and we were really happy with not only what we were eating but how we felt. Not all of these salads would be considered paleo, but they’re definitely an improvement over the quick junk we were eating too much of before.
I try to serve at least one salad a day for either lunch of dinner. Sometimes it’s a side dish, others a main course, but I’ve found that when I add different ingredients and the salad is bright and colorful, my kids are much more eager to gobble them up. A good salad dressing doesn’t hurt either.

Those all look delicious! I love the idea of not cooking in this heat. It was 95 degrees in WA today!

Ugh, 95?! We’ve had a rainy week so we’ve been in the mid-70s so that hasn’t been too bad, but yeah the less I can use the oven in the summer the better!
